Cheddar Ritz Vidalia Onion Pie (Print Version)

Caramelized Vidalia onions with cheddar and Ritz create a comfort-filled, delectable southern pie.

# Ingredients:

→ Filling

01 - 2 tablespoons unsalted butter
02 - 3 cups Vidalia onions, thinly sliced
03 - 1 teaspoon salt
04 - 1/2 teaspoon black pepper
05 - 1/2 teaspoon garlic powder
06 - 1/2 teaspoon dried thyme
07 - 1 cup shredded sharp cheddar cheese
08 - 1 cup sour cream
09 - 3 large eggs

→ Crust and Topping

10 - 1 cup crushed Ritz crackers (about 2 sleeves)
11 - 1/4 cup grated Parmesan cheese

# Steps:

01 - Preheat oven to 350°F (177°C).
02 - Melt butter in a large skillet over medium heat. Add thinly sliced Vidalia onions and salt. Cook, stirring occasionally, until onions are soft and caramelized, about 15 to 20 minutes. Remove from heat and allow to cool slightly.
03 - In a large mixing bowl, combine the caramelized onions, black pepper, garlic powder, dried thyme, shredded cheddar cheese, sour cream, and eggs. Mix until thoroughly blended.
04 - In a separate bowl, combine crushed Ritz crackers and grated Parmesan cheese.
05 - Grease a 9-inch pie dish. Spread half of the cracker and Parmesan mixture evenly on the bottom to form a crust. Pour the onion and cheese filling over the crust and spread evenly. Top with the remaining cracker mixture.
06 - Bake in the preheated oven for 30 to 35 minutes, or until the topping is golden brown and the filling is set. Remove from oven and let cool for 10 minutes before slicing.
