# Ingredients:

01 - 6 medium carrots, peeled and shredded
02 - 1 large apple, grated or julienned
03 - 1/2 cup diced celery (optional)
04 - 1 tablespoon chopped fresh parsley

05 - 3/4 cup plain yogurt or Greek yogurt

→ Pantry

06 - 1 teaspoon honey or maple syrup
07 - 2 tablespoons freshly squeezed lemon juice
08 - Salt, to taste
09 - Freshly ground black pepper, to taste

# Steps:

01 - Peel and shred the carrots and apple using a box grater or food processor. Dice the celery if using.
02 - In a small bowl, whisk together the yogurt, honey, lemon juice, chopped parsley, salt, and black pepper.
03 - In a large bowl, combine the shredded carrots, apple, and celery if using. Pour the dressing over the mixture and toss until evenly coated.
04 - Cover the bowl and refrigerate for at least 60 minutes to allow the flavors to meld.
05 - Garnish with extra parsley or seeds or nuts as desired before serving.
