Creamy Bacon Parmesan Risotto (Print Version)

# Ingredients:

01 - 3 cups low-sodium chicken broth
02 - 1 Tbsp. best quality olive oil
03 - 2 strips thick-cut bacon, cut into 1/2" pieces
04 - 1/2 small shallot, finely diced
05 - 2 cloves garlic, minced
06 - 1 cup arborio rice
07 - 1/4 cup dry white wine
08 - 4 Tbsp. finely chopped caramelized onions
09 - 1/3 cup finely grated parmesan-reggiano
10 - 1 Tbsp. unsalted butter
11 - Finely chopped chives for garnish
12 - Salt and pepper to taste

# Instructions:

01 - Set your pot over medium-low heat and pour in the chicken broth. Let it come to a gentle simmer, then keep it warm until you're ready to use it.
02 - Heat a large sauté pan over medium heat. Add the olive oil and bacon pieces, cooking until they're nice and crispy (about 10 minutes). Use a slotted spoon to scoop out the bacon and place it on some paper towels to drain.
03 - Turn the heat down to medium-low. Toss in the diced shallots with a pinch of salt and cook for 1-2 minutes until they're soft. If they're cooking too fast, just lift the pan off the heat for a moment. You want them soft and fragrant, not burnt!
04 - Add the minced garlic and cook with the shallots for about a minute. Then add the arborio rice, stirring to coat it in all that flavorful oil, garlic, and shallot mixture. Let the rice cook for 2-3 minutes until you can see just a tiny white dot in the middle of each grain.
05 - Pour in the white wine and let it bubble away as the rice absorbs it, about 2-3 minutes. This cooks out the alcohol while adding fantastic flavor.
06 - Now for the main event! Start adding that warm chicken broth one ladle at a time. Wait until each ladle is nearly absorbed before adding the next. This whole process takes about 20-25 minutes. As you go, you'll see the rice transform into that creamy, magical texture that makes risotto so special.
07 - Once the rice has just the slightest bite to it (al dente!), stir in those wonderful caramelized onions and the crispy bacon pieces. Then take your masterpiece off the heat.
08 - Stir in the parmesan and butter until melted and incorporated. Season with salt and pepper to your liking. Sprinkle with those fresh chopped chives, and serve while it's hot and creamy!
