Candied Yams with Bacon (Print Version)

Sweet potatoes and bacon glazed in maple and brown sugar are cooked until tender and richly flavored.

01 - 4 medium sweet potatoes, peeled and diced
02 - 4 slices bacon, chopped
03 - 1/4 cup unsalted butter
04 - 1/4 cup packed brown sugar
05 - 2 tablespoons maple syrup
06 - 1 teaspoon ground cinnamon
07 - 1/4 teaspoon ground nutmeg
08 - 1/2 cup chopped pecans
09 - Kosher salt, to taste
10 - Freshly ground black pepper, to taste

# Steps:

01 - Cook chopped bacon in a large skillet over medium heat until crisp. Remove bacon pieces with a slotted spoon and transfer to paper towels. Reserve approximately 1 tablespoon of bacon fat in the skillet.
02 - Add unsalted butter to the reserved bacon fat in the skillet and melt over medium heat. Stir in brown sugar, maple syrup, cinnamon, nutmeg, salt, and pepper until well combined. Simmer for 1 to 2 minutes until slightly thickened.
03 - Add diced sweet potatoes to the skillet and toss thoroughly in the glaze. Cover and cook over medium-low heat, stirring occasionally, for 20 to 25 minutes or until the sweet potatoes are fork-tender and caramelized.
04 - Stir in the cooked bacon pieces and chopped pecans. Cook for 2 to 3 minutes until heated through.
05 - Transfer sweet potatoes to a serving platter and serve warm.
