Spicy shrimp and seasoned egg yolks in a creamy, zesty filling create a Southern-inspired appetizer everyone loves.

# Ingredients:

→ Eggs

01 - 12 large eggs

→ Seafood

02 - 24 small raw shrimp, peeled and deveined

→ Dressing

03 - 1/2 cup mayonnaise
04 - 2 tablespoons creole mustard

→ Vegetables and Aromatics

05 - 2 tablespoons finely chopped green onions
06 - 4 teaspoons finely chopped pickled jalapeños

→ Seasonings

07 - Cajun seasoning to taste

→ Oil

08 - 1 tablespoon avocado oil

# Steps:

01 - Place the eggs in a large pot of boiling water and cook for 13 minutes. Transfer immediately to an ice water bath and let sit for 15 minutes before peeling.
02 - Season raw shrimp with Cajun seasoning. Heat avocado oil in a skillet over medium-high heat and sear shrimp for 1 to 2 minutes per side until pink and opaque. Cool completely.
03 - Carefully halve the peeled eggs and remove yolks. Mash yolks in a mixing bowl, then blend with mayonnaise, creole mustard, chopped green onions, pickled jalapeños, and additional seasonings as desired. Chill filling in the refrigerator for optimal flavor.
04 - Using a piping bag or spoon, fill each egg white half with prepared yolk mixture. Top each filled egg with one seared shrimp and garnish if desired.

# Notes:

01 - For easier peeling, use eggs that are slightly older and ensure they are fully cooled in the ice bath.
02 - Chilling the filling enhances flavor and allows the mixture to firm up, making assembly neater.
