Season raw shrimp with Cajun seasoning. Heat avocado oil in a skillet over medium-high heat and sear shrimp for 1 to 2 minutes per side until pink and opaque. Cool completely.

Carefully halve the peeled eggs and remove yolks. Mash yolks in a mixing bowl, then blend with mayonnaise, creole mustard, chopped green onions, pickled jalapeños, and additional seasonings as desired. Chill filling in the refrigerator for optimal flavor.

Using a piping bag or spoon, fill each egg white half with prepared yolk mixture. Top each filled egg with one seared shrimp and garnish if desired.
