Heat the olive oil in a large skillet over medium-high heat. Add the sliced Andouille sausage and sear until well-browned on both sides. Remove from skillet and set aside.

Reduce heat to medium and add 2 tablespoons of butter to the same skillet. Add the chopped onions and sauté until soft and translucent, about 3-4 minutes.

Add the remaining 4 tablespoons of butter to the skillet along with the chopped cabbage. Sprinkle the Cajun seasoning evenly over the mixture and stir to combine.

Pour in the heavy whipping cream and stir to thoroughly incorporate with the cabbage mixture.

Cover the skillet and allow to simmer until the cabbage begins to soften, approximately 5-7 minutes.

Remove the lid and add the grated Parmesan cheese. Stir continuously until the cheese melts and the sauce thickens.

Return the sausage to the skillet, folding it into the creamy cabbage mixture. Allow to heat through for 2 minutes before serving.
