Crispy chicken rounds filled with gooey mozzarella and smoky bacon, finished in spicy buffalo sauce.

# Ingredients:

→ Mozzarella Filling

01 - 8 ounces mozzarella cheese, cut into bite-sized cubes
02 - 1 cup cooked bacon, crumbled

→ Chicken Mixture

03 - 1 pound ground chicken
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon paprika
07 - Salt, to taste
08 - Black pepper, to taste
09 - 0.5 cup buffalo sauce

→ Breading

10 - 1 cup all-purpose flour
11 - 2 large eggs, beaten
12 - 1 cup breadcrumbs

→ For Frying and Serving

13 - Vegetable oil or canola oil, for frying
14 - 0.5 cup buffalo sauce, for tossing or drizzling
15 - Additional bacon bits, optional, for garnish

# Steps:

01 - Cut mozzarella into cubes. Wrap each cube with crumbled cooked bacon and set aside.
02 - In a bowl, thoroughly combine ground chicken with garlic powder, onion powder, paprika, salt, pepper, and 0.5 cup buffalo sauce until evenly seasoned.
03 - Take a small portion of seasoned chicken mixture and flatten it in your palm. Place a bacon-wrapped mozzarella cube in the center, then enclose and seal the chicken entirely around the filling, forming a tight ball.
04 - Roll each chicken ball in flour to coat. Dip in beaten eggs, then evenly coat with breadcrumbs.
05 - For frying: Heat oil in a deep pan to 350°F. Fry each ball for 5 to 6 minutes until golden brown and the internal temperature reaches 165°F. For baking: Preheat oven to 400°F, arrange on a greased baking sheet, and bake for 18 to 20 minutes until thoroughly cooked.
06 - Toss or drizzle cooked balls with the remaining buffalo sauce. Garnish with extra bacon bits if desired and serve hot.
