# Ingredients:

→ Broccoli

01 - 2 bunches broccoli, approximately 1 pound each, or 2 pounds broccoli florets

→ Dressing

02 - 1/3 cup mayonnaise
03 - 3 tablespoons Greek yogurt
04 - 1/2 ounce Parmigiano-Reggiano cheese, freshly grated
05 - 1 tablespoon lemon juice
06 - Zest of 1 lemon
07 - 1/2 teaspoon garlic, minced
08 - 1/2 tablespoon extra-virgin olive oil
09 - 1 teaspoon Worcestershire sauce
10 - 3/4 teaspoon Dijon mustard
11 - 1/2 teaspoon anchovy paste
12 - 1/4 teaspoon kosher salt
13 - 1/8 teaspoon freshly ground black pepper
14 - 1/8 teaspoon cayenne pepper
15 - 1/4 cup unflavored collagen or protein powder

→ Topping

16 - 1/2 cup bran flakes, crushed
17 - 1 teaspoon extra-virgin olive oil
18 - 1 teaspoon garlic, minced
19 - 1 ounce Parmigiano-Reggiano cheese, freshly grated

# Instructions:

01 - In a medium bowl, combine the mayonnaise, Greek yogurt, Parmigiano-Reggiano, lemon juice, lemon zest, minced garlic, extra-virgin olive oil, Worcestershire sauce, Dijon mustard, anchovy paste, salt, black pepper, cayenne, and collagen or protein powder. Whisk until smooth and homogenous. Cover and refrigerate until ready to assemble.
02 - Wash broccoli thoroughly and pat dry. Remove the florets from the stems, cutting into small bite-sized pieces for ease of eating.
03 - Place broccoli florets in a large bowl. Pour the prepared dressing over the broccoli and toss until evenly coated. Set aside to allow flavors to meld or refrigerate if making ahead.
04 - Heat 1 teaspoon olive oil in a small skillet over medium-low. When the oil is shimmering, add minced garlic and sauté until fragrant, about 1 minute, stirring regularly. Add crushed bran flakes and a generous pinch of salt. Cook, stirring occasionally, until the cereal is evenly coated and crisped. Remove from heat and cool slightly.
05 - Arrange the dressed broccoli in a mound on a serving plate. Top with 1 ounce freshly grated Parmigiano-Reggiano. Scatter the garlicky bran flake mixture over the salad. Serve immediately.
