Fry the bacon in a hot frying pan until done to your preference. Remove from the pan and slice into bite-sized pieces.

Pre-heat a non-stick pan over medium-low heat. Melt a teaspoon of butter in the hot pan and swirl to coat the bottom evenly.

Whisk the eggs until well combined but not too frothy. Season with salt and pepper.

Pour the egg mixture into the pan. Loosen the edges from the pan with a rubber spatula as it cooks. Allow to cook until done to your preference.

Add the sliced bacon and Brie to one half of the omelette, then fold the other half over. Carefully transfer to a plate and serve immediately.
