Divide sausage into 4 equal portions and roll into balls. Place each ball on the hot griddle and press flat with a spatula to form thin patties. Cook for 2 to 3 minutes per side, until browned and cooked through. Place 1 slice of pepper jack cheese on each patty and allow to melt. Remove from heat and set aside.

Arrange bacon slices in a cold skillet and cook over medium heat until crispy, about 6 to 8 minutes, turning as needed. Drain on paper towels.

Heat a nonstick skillet over medium heat. Crack eggs into the skillet and cook sunny-side up, seasoning with salt and freshly ground black pepper. Cook until whites are set and yolks remain runny, about 3 to 4 minutes.

On a plate, layer 1 pancake, 1 sausage patty with melted cheese, 2 slices of bacon, and 1 fried egg. Top with a second pancake to form a sandwich.
