Breakfast Grilled Cheese Eggs (Print Version)

Savory sausage, scrambled eggs, and cheese melted on golden sourdough make a warm, hearty breakfast sandwich.

01 - 8 ounces ground breakfast sausage
02 - 6 large eggs, beaten
03 - 8 slices Colby-Jack cheese
04 - 4 tablespoons unsalted butter, softened, divided
05 - 8 slices sourdough bread

# Instructions:

01 - Heat a large non-stick skillet over medium-high heat. Add ground breakfast sausage and cook, breaking into crumbles, until browned and no longer pink. Transfer the cooked sausage to a medium mixing bowl lined with paper towels to absorb excess fat. Set aside. Wipe the skillet clean with a paper towel.
02 - In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour in the beaten eggs. Once the eggs begin to set, stir gently to scramble until only a small amount of liquid remains. Remove the skillet from the heat.
03 - Remove paper towels from the bowl with the sausage, leaving the sausage inside. Add the scrambled eggs to the sausage. Gently fold the mixture together until just combined. Wipe the skillet again and return it to the heat.
04 - Spread softened butter on one side of each slice of sourdough bread. Place one slice of bread, buttered side down, in the skillet. Layer a slice of Colby-Jack cheese, about 1/2 cup of the sausage-egg mixture, then another slice of cheese. Top with another slice of buttered bread, buttered side up.
05 - Cook over medium heat until the bottom bread is golden brown, about 3-4 minutes. Carefully flip the sandwich and cook the second side until golden brown and the cheese is melted. Remove from pan and let cool slightly.
06 - Transfer sandwiches to a cutting board and slice in half, if desired. Repeat assembly and cooking steps with remaining ingredients. Serve immediately.
