Breakfast Chili and Eggs (Print Version)

# Ingredients:

→ Proteins

01 - 4 slices center cut bacon
02 - 1 pound raw turkey breakfast sausage

→ Vegetables

03 - 1 white onion, finely diced
04 - 1 poblano or bell pepper, finely diced
05 - 2 cloves garlic, minced or grated

→ Pantry Items

06 - 1 packet chili seasoning
07 - 1 can (28 oz) fire roasted crushed tomatoes
08 - 3-4 cups beef broth

# Instructions:

01 - Add bacon to a Dutch oven or soup pot over medium heat. Cook thoroughly until crisp, then transfer to a paper towel to drain.
02 - Add diced onion and pepper to the remaining bacon grease. Cook for 2-3 minutes until softened, then add garlic and cook for another 30-60 seconds until fragrant.
03 - Add turkey sausage to the pot, breaking it apart with a spoon. Cook thoroughly until no pink remains.
04 - Add chili seasoning, crushed tomatoes and beef broth to the pot. Chop or crumble the cooked bacon and add it back to the mixture. Bring to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes until flavors meld and chili thickens to desired consistency.
