Brazilian Coconut Pudding (Print Version)

# Ingredients:

01 - 1 tablespoon butter
02 - 1 can (14 ounces) sweet condensed milk
03 - 3 cups (8 ounces) unsweetened shredded or flaked coconut
04 - 1 cup coconut milk
05 - 1/2 cup heavy cream

# Instructions:

01 - Combine the butter, sweet condensed milk, coconut and coconut milk in a medium saucepan. Cook over medium-low heat, stirring constantly, until thickened and starting to release from the bottom of the pan.
02 - Stir in the heavy cream and remove from heat. Note that the coconut pudding might look loose at this stage, but it will continue thickening as it cools.
03 - Pour into individual serving glasses. Serve at room temperature or chilled.

# Notes:

01 - This traditional Brazilian dessert is also known as 'Cocada Cremosa' and will thicken substantially as it cools.
