Blueberry Tomato Caprese Basil (Print Version)

Blueberries and cherry tomatoes combine with basil, mozzarella, and balsamic for a bright, fresh summer dish.

# Ingredients:

01 - 1 pint fresh blueberries
02 - 2 pints cherry tomatoes
03 - Fresh basil leaves

04 - 8 ounces firm buffalo mozzarella cheese

05 - Extra-virgin olive oil, for drizzling
06 - Balsamic vinegar, for drizzling
07 - Kosher salt, to taste
08 - Freshly ground black pepper, to taste

# Instructions:

01 - Rinse blueberries and cherry tomatoes thoroughly. Drain well in a colander.
02 - Slice cherry tomatoes in half and add to a serving bowl with the blueberries. Gently toss to combine and set aside.
03 - Cut mozzarella cheese into 1/4 or 1/2 inch slices, then use a small star-shaped cookie cutter to form decorative pieces. Place the mozzarella stars evenly over the berry-tomato mixture.
04 - Tear fresh basil leaves and sprinkle over the salad. Drizzle with extra-virgin olive oil and balsamic vinegar.
05 - Season with kosher salt and freshly ground black pepper. Serve immediately.
