Easy Blackstone Cowboy Stir Fry (Print Version)

# Ingredients:

→ Stir Fry Base

01 - 1 pound smoked or Polish sausage, sliced
02 - 3 medium Yukon gold potatoes, thinly sliced
03 - 1 medium zucchini, sliced
04 - 1 red bell pepper, chopped
05 - 1 large onion, chopped
06 - 2 tablespoons olive oil or vegetable oil

→ Seasoning

07 - 1 teaspoon garlic powder
08 - 1 teaspoon onion powder
09 - 1 teaspoon smoked paprika
10 - 1/2 teaspoon black pepper
11 - 1 teaspoon salt or more to taste

→ Garnish

12 - Fresh parsley, chopped (optional)

# Steps:

01 - Heat a griddle or large skillet over medium-high heat and add 1 tablespoon oil.
02 - Add sliced potatoes. Season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10 to 12 minutes, stirring occasionally until golden brown and almost tender.
03 - Push potatoes to the side of the pan. Add the remaining 1 tablespoon oil and the sliced sausage. Cook for about 5 minutes, stirring occasionally until sausage is browned.
04 - Incorporate the chopped onion, bell pepper, and zucchini. Stir to combine and cook for 5 to 7 minutes, or until vegetables are tender.
05 - Taste and adjust seasoning if necessary. Serve hot and garnish with fresh parsley if desired.

01 - For even cooking, slice potatoes thinly and try to keep all slices uniform in thickness.
