01 - 1 pound lean ground beef
02 - Salt, to taste
03 - Black pepper, to taste
04 - 1/2 cup finely chopped dill pickles, plus extra for layering
05 - 4 large burrito-size flour tortillas
06 - 2 cups shredded sharp cheddar cheese

07 - 1/2 cup mayonnaise
08 - 1/4 cup ketchup
09 - 2 tablespoons minced dill pickles
10 - 2 tablespoons minced onion
11 - 1 teaspoon white vinegar

# Steps:

01 - Preheat the Blackstone griddle to medium-high heat, approximately 400 degrees Fahrenheit.
02 - Place ground beef on the hot griddle and break apart with a spatula. Season evenly with salt and pepper. Cook until thoroughly browned and no longer pink, then transfer to a plate.
03 - In a mixing bowl, combine mayonnaise, ketchup, minced pickles, minced onion, and white vinegar. Stir thoroughly until smooth and set aside.
04 - Lay the tortillas flat on the griddle. On half of each tortilla, spread an even layer of special sauce. Top with cooked beef, extra chopped pickles, and a generous amount of shredded cheddar cheese.
05 - Fold the tortillas over the filling to form a half-moon shape. Cook for 2 to 3 minutes on each side, turning carefully, until golden brown and crisp with the cheese fully melted.
06 - Remove quesadillas from the griddle. Slice into wedges and serve hot.
