In a mixing bowl, combine mayonnaise, ketchup, minced pickles, minced onion, and white vinegar. Stir thoroughly until smooth and set aside.

Lay the tortillas flat on the griddle. On half of each tortilla, spread an even layer of special sauce. Top with cooked beef, extra chopped pickles, and a generous amount of shredded cheddar cheese.

Fold the tortillas over the filling to form a half-moon shape. Cook for 2 to 3 minutes on each side, turning carefully, until golden brown and crisp with the cheese fully melted.
