Combine blackberries, water, lemon juice, and granulated sugar in a saucepan over medium heat. Cook, stirring occasionally, for 20 to 30 minutes until the mixture thickens. Mash the berries with a spoon and let the jam cool completely to room temperature.

Allow frozen puff pastry sheets to thaw at room temperature for 20 to 25 minutes. Place on a lightly floured surface and roll each sheet into a large rectangle.

Evenly spread half of the goat cheese over each sheet of puff pastry, then top with half of the cooled blackberry jam on each sheet.

Cut each filled pastry sheet into 6 strips lengthwise for a total of 12 strips. Fold each strip in half lengthwise, then gently twist each strip while lightly stretching.

In a small bowl, mix lemon zest, raw sugar, and minced fresh thyme until combined.

Arrange the twists on a parchment-lined baking sheet. Brush each twist with beaten egg. Sprinkle generously with the lemon thyme sugar mixture.

Bake in a preheated oven at 400°F for 16 to 18 minutes until golden brown. Remove from oven and cool on a wire rack before serving.
