Blackberry Goat Cheese Puff Pastry (Print Version)

Puff pastry twists packed with goat cheese, blackberry jam, lemon zest, and thyme for a sweet-savory treat.

# Ingredients:

→ Puff Pastry

01 - 2 sheets frozen puff pastry, thawed

→ Blackberry Jam

02 - 2 cups fresh blackberries
03 - 1/2 cup water
04 - 1 tablespoon lemon juice
05 - 3/4 cup granulated sugar

→ Filling

06 - 8 ounces goat cheese, softened

→ Lemon Thyme Sugar

07 - 2 lemons, zested
08 - 4 teaspoons raw sugar
09 - 2 teaspoons fresh thyme, minced

→ Egg Wash

10 - 1 large egg, beaten

# Steps:

01 - Combine blackberries, water, lemon juice, and granulated sugar in a saucepan over medium heat. Cook, stirring occasionally, for 20 to 30 minutes until the mixture thickens. Mash the berries with a spoon and let the jam cool completely to room temperature.
02 - Allow frozen puff pastry sheets to thaw at room temperature for 20 to 25 minutes. Place on a lightly floured surface and roll each sheet into a large rectangle.
03 - Evenly spread half of the goat cheese over each sheet of puff pastry, then top with half of the cooled blackberry jam on each sheet.
04 - Cut each filled pastry sheet into 6 strips lengthwise for a total of 12 strips. Fold each strip in half lengthwise, then gently twist each strip while lightly stretching.
05 - In a small bowl, mix lemon zest, raw sugar, and minced fresh thyme until combined.
06 - Arrange the twists on a parchment-lined baking sheet. Brush each twist with beaten egg. Sprinkle generously with the lemon thyme sugar mixture.
07 - Bake in a preheated oven at 400°F for 16 to 18 minutes until golden brown. Remove from oven and cool on a wire rack before serving.
