Bistek Tagalog Beef Sirloin (Print Version)

# Ingredients:

→ Meat

01 - 1 1/2 lbs beef sirloin, thinly sliced

→ Marinade

02 - 5 tablespoons soy sauce
03 - 4 pieces calamansi or 1 lemon, juiced
04 - 1/2 teaspoon ground black pepper

→ Aromatics

05 - 3 cloves garlic, minced
06 - 3 medium onions, sliced into rings

→ Other

07 - 4 tablespoons cooking oil
08 - 1 cup water
09 - 1 pinch salt

# Instructions:

01 - Combine beef, soy sauce, lemon (or calamansi), and ground black pepper in a bowl. Marinate for at least 1 hour, preferably overnight for best results.
02 - Heat the cooking oil in a pan then pan-fry half of the onion rings until soft and slightly caramelized. Remove and set aside for garnish.
03 - Drain the marinade from the beef, reserving the liquid. Using the same pan, quickly sear the beef slices for about 1 minute per side. Remove from pan and set aside.
04 - Add more oil to the pan if needed. Sauté garlic and remaining raw onions until onions soften.
05 - Pour the reserved marinade and water into the pan. Bring the mixture to a boil.
06 - Return the beef to the pan. Cover and simmer until meat is tender, adding more water as needed during cooking.
07 - Adjust seasoning with additional ground black pepper and salt as needed. Top with the reserved pan-fried onions and serve hot.
