Best Gourmet Grilled Cheese (Print Version)

# Ingredients:

→ For the Spread

01 - 2 tablespoons garlic and herb soft cheese (like Boursin), at room temperature
02 - 1 tablespoon chopped walnuts or pecans
03 - 2 teaspoons sun-dried tomatoes in oil, chopped

→ For the Sandwich

04 - 2 large slices rustic or sourdough bread
05 - 2 teaspoons butter
06 - 10 baby spinach leaves
07 - 8-10 kalamata olives, pitted and halved
08 - 1/3 cup shredded mozzarella or 2-3 fresh mozzarella slices

# Instructions:

01 - Mix together your room temperature garlic herb cheese, chopped nuts, and sun-dried tomatoes until you've got a nice creamy spread.
02 - Butter one side of each bread slice and lightly toast them butter-side-down in your pan until golden. Take them out of the pan.
03 - Spread your garlic herb mixture on the non-buttered sides of both slices. On one slice, layer your spinach, olives, and cheese, then top with the other slice.
04 - Cook your sandwich over medium-low heat for about 3-4 minutes per side. You want the cheese nice and melty and the bread golden and crunchy.
