01 - 1/2 pineapple, peeled, cored, and sliced
02 - 1 tablespoon vegetable oil, for grilling
03 - 1 (14 ounce) bag tortilla chips
04 - 2 cups cooked chicken, shredded or sliced
05 - 1/2 cup barbecue sauce
06 - 1/2 cup red onion, sliced or diced
07 - 1/2 cup candied jalapeños
08 - 2 cups Monterey Jack cheese, shredded

# Steps:

01 - Preheat a grill to medium-high heat and lightly oil the grates. Grill pineapple slices for 2–3 minutes per side until lightly charred. Remove from grill and chop into bite-sized pieces.
02 - Set oven temperature to 350°F (180°C). Maintain heat for even baking.
03 - In a bowl, combine shredded or sliced cooked chicken with barbecue sauce. Toss until chicken is evenly coated.
04 - Arrange tortilla chips in a single layer on a large oven-safe baking dish or sheet pan.
05 - Distribute grilled pineapple, barbecue chicken, red onion, candied jalapeños, and shredded Monterey Jack cheese over the chips. Bake for 5–10 minutes, or until cheese is fully melted and bubbly.
06 - Remove from oven. Add desired toppings such as crumbled bacon, fresh cilantro, and additional jalapeños. Serve immediately while hot.
