BBQ Chicken Flatbread Pizza (Print Version)

Tangy BBQ chicken, gooey mozzarella, and sweet peppers on toasted flatbread, finished with fresh cilantro.

# Ingredients:

→ Chicken Preparation

01 - 2 large chicken breasts
02 - 1 teaspoon olive oil
03 - 0.5 teaspoon dried oregano
04 - 0.25 teaspoon dried tarragon
05 - 0.25 teaspoon salt

→ Flatbread Components

06 - 2 flatbreads
07 - 0.5 cup barbecue sauce, plus extra for drizzling
08 - 2 garlic cloves, minced
09 - 1 cup mozzarella cheese, shredded
10 - 1 small red bell pepper, chopped
11 - 0.25 cup red onion, sliced
12 - 2 tablespoons fresh cilantro, chopped

→ Optional Finishing

13 - 2 tablespoons red pepper flakes
14 - 3 tablespoons parmesan cheese, grated

# Steps:

01 - Pat chicken breasts dry and, if necessary, halve them for even cooking. In a small bowl, combine the dried oregano, tarragon, and salt. Sprinkle the seasoning blend over both sides of the chicken.
02 - Heat olive oil in a skillet over medium-high heat. Add seasoned chicken and cook for 8 to 10 minutes per side, ensuring the internal temperature reaches 74°C. Remove from heat, let rest briefly, and cut into bite-sized pieces.
03 - Preheat oven to 190°C. Lay flatbreads on a large baking sheet. Brush each generously with barbecue sauce and evenly distribute the minced garlic.
04 - Sprinkle mozzarella cheese over the sauced flatbreads. Top with cooked chicken, red onion, and chopped red bell pepper. If desired, add red pepper flakes and parmesan.
05 - Place the baking sheet on the center oven rack and bake for 10 to 15 minutes until the flatbread edges are golden and the cheese is melted and bubbling.
06 - Remove flatbreads from the oven and cool briefly. Top with chopped cilantro and additional barbecue sauce as desired. Slice and serve warm.

# Notes:

01 - For convenience, rotisserie chicken can be substituted and shredded to reduce preparation time.
