In a large bowl, combine shredded chicken with melted butter and barbecue sauce until evenly coated.

Spread the chicken mixture evenly over the dough, leaving a 1-inch border along one long side. Evenly top with cheddar, mozzarella, and pepper jack cheeses. Scatter sautéed onions if using.

Fold the filled edge over about 2 inches, then fold in the sides and roll tightly into a log. Pinch the seams and ends to seal. Place seam-side down on the prepared baking sheet.

Brush the top with beaten egg, then sprinkle grated Parmesan and Italian seasoning over the surface.
