01 - Vegetable oil, sufficient amount for deep frying
02 - 1 1/2 cups all-purpose flour
03 - 1/2 cup cornstarch
04 - 1 tablespoon baking powder
05 - 2 teaspoons kosher salt
06 - 1/2 teaspoon cayenne pepper
07 - 1 1/2 cups water
08 - 2 pounds cod, hake, or other firm white fish fillets

# Steps:

01 - Preheat vegetable oil in a deep fryer or medium saucepan to 350°F (177°C), ensuring there is enough oil to fully submerge the fish fillets.
02 - In a medium bowl, blend all-purpose flour, cornstarch, baking powder, kosher salt, and cayenne pepper. Gradually whisk in the water until a smooth, slightly foamy batter forms.
03 - Pat fish fillets dry with paper towels to remove excess surface moisture. Dip each fillet in the batter, ensuring a thorough and even coating.
04 - Carefully lower the battered fish fillets into hot oil. Fry for 3 to 4 minutes or until golden brown and crisp, turning as necessary for even cooking. Avoid overcrowding the pan.
05 - Use a slotted spoon or tongs to transfer fried fillets to a wire rack set over a tray, allowing excess oil to drain before serving.
