Mash one of the bananas and set aside the other for topping.

Stir together the mashed banana, coconut yoghurt, vanilla paste or extract, maple syrup, chia seeds, and coconut milk until there are no lumps. Let sit for 5 minutes and stir again.

Cover the mixture and refrigerate overnight.

Serve in 2 glasses. Top with the reserved banana slices, coconut yoghurt, and coconut chips. Optionally, divide the pudding into 3 layers by adding extra yoghurt for a layered effect.
