Banana Coconut Chia Pudding (Print Version)

# Ingredients:

01 - 1 cup coconut yoghurt
02 - 2 very ripe bananas
03 - ½ teaspoon vanilla paste or extract
04 - 1 teaspoon maple syrup
05 - 5 tablespoons chia seeds
06 - ½ cup coconut milk
07 - Coconut yoghurt, coconut chips, banana slices for topping

# Instructions:

01 - Mash one of the bananas and set aside the other for topping.
02 - Stir together the mashed banana, coconut yoghurt, vanilla paste or extract, maple syrup, chia seeds, and coconut milk until there are no lumps. Let sit for 5 minutes and stir again.
03 - Cover the mixture and refrigerate overnight.
04 - Serve in 2 glasses. Top with the reserved banana slices, coconut yoghurt, and coconut chips. Optionally, divide the pudding into 3 layers by adding extra yoghurt for a layered effect.
