Oven-baked salmon with rich spinach cream sauce and lemon. Simple, elegant dinner in under 30 minutes.

# Ingredients:

→ Salmon

01 - 2 to 3 salmon fillets
02 - 1 tablespoon olive oil
03 - Salt, to taste
04 - Black pepper, to taste
05 - 1/2 teaspoon smoked paprika
06 - 1 lemon, sliced, for garnish

→ Creamy Spinach Sauce

07 - 2 cups fresh spinach, washed and chopped
08 - 1 tablespoon butter
09 - 2 cloves garlic, minced
10 - 1/2 cup heavy cream
11 - 1/4 cup grated Parmesan cheese
12 - Salt, to taste
13 - Black pepper, to taste
14 - Pinch ground nutmeg

# Steps:

01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper or grease lightly. Arrange salmon fillets on the sheet. Drizzle olive oil and season with salt, black pepper, and smoked paprika. Bake for 12–15 minutes, until the salmon flakes easily with a fork.
02 - While the salmon bakes, melt butter in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until aromatic. Add spinach and cook, stirring, for 2–3 minutes until wilted. Lower the heat, pour in heavy cream, and stir well. Sprinkle in Parmesan cheese, salt, black pepper, and a pinch of nutmeg. Continue stirring until the sauce thickens slightly.
03 - Arrange the baked salmon fillets onto serving plates. Spoon the creamy spinach sauce generously over the salmon. Garnish with lemon slices and additional Parmesan if desired. Accompany with steamed rice, roasted potatoes, or a crisp salad.

# Notes:

01 - Ensure salmon fillets are at room temperature before baking for even cooking.
02 - Parmesan can be substituted with Pecorino for a bolder flavor.
