Preheat the oven to 400°F. Line a baking sheet with parchment paper or grease lightly. Arrange salmon fillets on the sheet. Drizzle olive oil and season with salt, black pepper, and smoked paprika. Bake for 12–15 minutes, until the salmon flakes easily with a fork.

While the salmon bakes, melt butter in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until aromatic. Add spinach and cook, stirring, for 2–3 minutes until wilted. Lower the heat, pour in heavy cream, and stir well. Sprinkle in Parmesan cheese, salt, black pepper, and a pinch of nutmeg. Continue stirring until the sauce thickens slightly.

Arrange the baked salmon fillets onto serving plates. Spoon the creamy spinach sauce generously over the salmon. Garnish with lemon slices and additional Parmesan if desired. Accompany with steamed rice, roasted potatoes, or a crisp salad.
