Greek Lemon Chicken (Print Version)

Juicy chicken thighs infused with lemon, garlic and Mediterranean herbs, baked until tender for an effortless Greek-inspired meal.

# Ingredients:

→ Chicken

01 - 8 boneless, skinless chicken thighs

→ Marinade

02 - Juice of 2 lemons
03 - 60 ml olive oil
04 - 4 cloves garlic, minced
05 - 3 teaspoons dijon mustard
06 - 3 teaspoons oregano
07 - 2 teaspoons thyme
08 - 1 teaspoon dill
09 - 1 teaspoon paprika
10 - 2-3 teaspoons salt
11 - 1 teaspoon black pepper

# Steps:

01 - Place chicken thighs in a large bowl or ziplock bag.
02 - In a small bowl, mix together lemon juice, olive oil, minced garlic, dijon mustard, oregano, thyme, dill, paprika, salt, and black pepper until well combined.
03 - Pour the marinade over the chicken and cover or seal bag. Refrigerate to marinate for 2-6 hours.
04 - Preheat oven to 175°C.
05 - Transfer marinated chicken to a large baking dish and pour remaining marinade over the top.
06 - Bake chicken for 40 minutes or until internal temperature reaches 74-79°C. For extra color, broil for the final 2-3 minutes.

01 - For best flavor, allow chicken to marinate overnight in the refrigerator.
