Place chicken thighs in a large bowl or ziplock bag.

In a small bowl, mix together lemon juice, olive oil, minced garlic, dijon mustard, oregano, thyme, dill, paprika, salt, and black pepper until well combined.

Pour the marinade over the chicken and cover or seal bag. Refrigerate to marinate for 2-6 hours.

Preheat oven to 175°C.

Transfer marinated chicken to a large baking dish and pour remaining marinade over the top.

Bake chicken for 40 minutes or until internal temperature reaches 74-79°C. For extra color, broil for the final 2-3 minutes.
