Baked Fish with Cherry Tomatoes (Print Version)

# Ingredients:

→ Fish Seasoning

01 - 1 fish fillet
02 - 1 teaspoon paprika
03 - 1 teaspoon Italian seasoning
04 - 1 teaspoon Cajun seasoning (or Old Bay/Creole seasoning)
05 - ½ teaspoon chilli flakes
06 - 1 teaspoon fish seasoning (optional)
07 - ½ teaspoon salt
08 - ½ teaspoon black pepper
09 - 3 tablespoons cooking oil

→ Tomatoes and Olives

10 - 2 cups cherry tomatoes
11 - ¼ cup olives
12 - 2 sprigs fresh parsley
13 - 2 sprigs fresh thyme
14 - 3 garlic cloves, minced
15 - 3 tablespoons salted butter
16 - 2 tablespoons water
17 - Pinch of salt and pepper

# Instructions:

01 - Preheat oven to 200°C (400°F).
02 - Combine paprika, Italian seasoning, Cajun seasoning, chilli flakes, fish seasoning, salt, black pepper, and oil in a small bowl. Reserve 1 teaspoon of this mixture for the tomatoes.
03 - Thoroughly coat both sides of the fish fillet with the seasoning mixture.
04 - Heat oil in an oven-safe pan over medium heat. Sear the fish for 1 minute on each side until lightly charred but not fully cooked. Remove and set aside.
05 - In the same pan over medium heat, add cherry tomatoes, olives, parsley, thyme, minced garlic, reserved seasoning, water, and a pinch of salt and pepper. Sauté for 3 minutes, stirring continuously.
06 - Place the seared fish in the center of the pan with the tomato mixture. Top the fish with butter. If your pan isn't oven-safe, transfer everything to a baking dish.
07 - Bake in the preheated oven for 10 minutes until the fish is cooked through.
08 - Remove from the oven and serve immediately with your preferred side dish.

01 - Ensure your pan is oven-safe before placing it directly in the oven.
02 - The fish should flake easily with a fork when fully cooked.
