Preheat oven to 200°C (400°F).

Combine paprika, Italian seasoning, Cajun seasoning, chilli flakes, fish seasoning, salt, black pepper, and oil in a small bowl. Reserve 1 teaspoon of this mixture for the tomatoes.

Thoroughly coat both sides of the fish fillet with the seasoning mixture.

Heat oil in an oven-safe pan over medium heat. Sear the fish for 1 minute on each side until lightly charred but not fully cooked. Remove and set aside.

In the same pan over medium heat, add cherry tomatoes, olives, parsley, thyme, minced garlic, reserved seasoning, water, and a pinch of salt and pepper. Sauté for 3 minutes, stirring continuously.

Place the seared fish in the center of the pan with the tomato mixture. Top the fish with butter. If your pan isn't oven-safe, transfer everything to a baking dish.

Bake in the preheated oven for 10 minutes until the fish is cooked through.

Remove from the oven and serve immediately with your preferred side dish.
