Wrap the tortillas in a damp paper towel and microwave for 20 to 30 seconds until pliable.

In a mixing bowl, combine shredded chicken, cream cheese, shredded cheddar or Monterey Jack cheese, salsa, cumin, chili powder, salt, black pepper, and green onions or cilantro if using.

Spoon 2 to 3 tablespoons of the chicken mixture onto the center of each tortilla. Roll each tortilla tightly and place seam-side down on the prepared baking sheet.

Lightly brush the taquitos with olive oil or spray with cooking spray. Bake for 15 to 20 minutes, flipping halfway through, until golden and crisp.

Allow taquitos to cool for 2 to 3 minutes, then serve with guacamole, sour cream, and salsa.
