Crispy Carrot Fries with Aioli (Print Version)

# Ingredients:

→ Carrot Fries

01 - 1 pound carrots, washed and cut into uniform fry shapes
02 - 2 tablespoons avocado oil
03 - 1 teaspoon sweet paprika
04 - 1 teaspoon garlic powder
05 - 1/2 teaspoon sea salt, or to taste
06 - 1 teaspoon chopped fresh thyme leaves
07 - 2 tablespoons arrowroot powder
08 - Fresh thyme leaves and flakey sea salt for garnish

→ Paprika Garlic Aioli

09 - 1/2 cup avocado oil mayo
10 - 2 teaspoons fresh lemon juice
11 - 1 teaspoon dijon mustard
12 - 1-2 cloves garlic, freshly grated
13 - 1/4 teaspoon sweet paprika
14 - 1/4 teaspoon smoked paprika
15 - A dash or two of cayenne powder (optional for heat lovers)
16 - Sea salt to taste

# Instructions:

01 - Get your oven nice and hot at 425°F and line two baking sheets with parchment paper for easy cleanup.
02 - Toss your carrot sticks in a big bowl with the avocado oil, sweet paprika, garlic powder, sea salt, thyme and arrowroot powder until they're evenly coated with all that goodness.
03 - Spread the seasoned carrots between your two baking sheets, making sure to give them some breathing room so they can get properly crispy instead of steaming.
04 - Pop them in your preheated oven for about 15 minutes, then flip them over and cook another 5-10 minutes until they're tender when pierced with a fork but deliciously crispy on the outside.
05 - While your fries are baking, stir together all the aioli ingredients in a bowl until well combined. Give it a taste and add more salt or spice if needed.
06 - Sprinkle the hot carrot fries with some fresh thyme leaves and a little flakey sea salt for that restaurant-quality finish. Serve them up with your homemade paprika garlic aioli for dipping.
