In a small bowl, mix feta cheese, dried cranberries, ground cinnamon, and vanilla extract until evenly combined.

Arrange the cored apples in the prepared baking dish and fill each apple cavity with the feta mixture, pressing gently.

Drizzle honey over each stuffed apple and place a small portion of butter on top of each.
