# Ingredients:

01 - 1/2 cup crumbled feta cheese
02 - 1/4 cup dried cranberries
03 - 1 teaspoon ground cinnamon
04 - 1/2 teaspoon vanilla extract

→ Apples

05 - 4 medium apples (such as Honeycrisp or Gala)

→ Topping & Garnish

06 - 2 tablespoons honey
07 - 1 tablespoon unsalted butter, divided
08 - 1 tablespoon chopped fresh mint (optional, for garnish)

# Steps:

01 - Preheat the oven to 375°F and lightly grease a baking dish.
02 - Carefully core each apple, leaving approximately 1/2 inch of the base intact to hold the filling.
03 - In a small bowl, mix feta cheese, dried cranberries, ground cinnamon, and vanilla extract until evenly combined.
04 - Arrange the cored apples in the prepared baking dish and fill each apple cavity with the feta mixture, pressing gently.
05 - Drizzle honey over each stuffed apple and place a small portion of butter on top of each.
06 - Cover the baking dish with foil and bake for 25 to 30 minutes until the apples are tender.
07 - Remove foil and bake for an additional 5 to 10 minutes until the tops are golden.
08 - Allow apples to cool slightly, then garnish with chopped fresh mint if desired. Serve warm.
