Bacon Maple Onion Jam Spread (Print Version)

Savory bacon, maple, and onion cooked into a versatile, sweet and salty spread for sandwiches, burgers, or snacks.

# Ingredients:

01 - 450 grams thick-cut bacon, diced into 0.6 cm pieces
02 - 2 cups diced yellow onion (approximately 1 large onion)
03 - 3 garlic cloves, finely minced
04 - 110 grams brown sugar
05 - 60 millilitres maple syrup
06 - 80 millilitres apple cider vinegar
07 - 1 teaspoon salt

# Instructions:

01 - Heat a large skillet over medium-high heat. Add diced bacon and cook for 15 to 20 minutes until deeply crisped.
02 - Using a slotted spoon, transfer bacon to a plate lined with paper towel. Carefully reserve one tablespoon of rendered bacon fat in a small bowl. Discard remaining fat safely once cooled.
03 - Return the reserved tablespoon of bacon fat to the skillet. Add diced onion and sauté, stirring occasionally, until deeply caramelised, about 15 minutes.
04 - Add minced garlic, brown sugar, maple syrup, apple cider vinegar, salt, and the cooked bacon to the skillet with onions. Stir to combine evenly.
05 - Simmer mixture over medium heat, stirring occasionally, until sugar dissolves and the contents thicken to a jam-like texture, approximately 15 minutes.
06 - Remove skillet from heat. Allow the bacon jam to cool before transferring to a clean glass jar. Store refrigerated for up to 7 days.

# Notes:

01 - For best flavour, use a high-quality smoked bacon and caramelise the onions slowly to develop sweetness.
