01 -
Heat a large skillet over medium-high heat. Add diced bacon and cook for 15 to 20 minutes until deeply crisped.
02 -
Using a slotted spoon, transfer bacon to a plate lined with paper towel. Carefully reserve one tablespoon of rendered bacon fat in a small bowl. Discard remaining fat safely once cooled.
03 -
Return the reserved tablespoon of bacon fat to the skillet. Add diced onion and sauté, stirring occasionally, until deeply caramelised, about 15 minutes.
04 -
Add minced garlic, brown sugar, maple syrup, apple cider vinegar, salt, and the cooked bacon to the skillet with onions. Stir to combine evenly.
05 -
Simmer mixture over medium heat, stirring occasionally, until sugar dissolves and the contents thicken to a jam-like texture, approximately 15 minutes.
06 -
Remove skillet from heat. Allow the bacon jam to cool before transferring to a clean glass jar. Store refrigerated for up to 7 days.
