Tasty Bacon Cheeseburger Meatloaf (Print Version)

Bacon-rich meatloaf stuffed with cheddar, crispy onions, and sweet tangy glaze. A hearty, comforting meal.

# Ingredients:

→ For the Meatloaf

01 - 1/2 cup dill pickle relish, drained
02 - 2 pounds lean ground beef
03 - 1/4 cup crispy fried onions, or 2 tablespoons onion flakes, or 1 teaspoon onion powder
04 - 2 large eggs
05 - 1 cup panko breadcrumbs
06 - 1 tablespoon Worcestershire sauce
07 - 1 teaspoon liquid smoke flavor
08 - 8 ounces sharp cheddar cheese, diced
09 - 6 slices uncooked bacon, finely chopped

→ For Assembly and Topping

10 - 10 slices uncooked bacon

→ For the Glaze

11 - 1/2 cup ketchup
12 - 1 tablespoon maple syrup or brown sugar
13 - 1 teaspoon sriracha (optional)

# Steps:

01 - Preheat oven to 350°F (177°C) and line or grease a 9x13-inch baking dish.
02 - Drain excess liquid from dill pickle relish to prevent a watery mixture.
03 - In a large bowl, gently mix together the drained pickle relish, lean ground beef, crispy fried onions (or substitute), eggs, panko breadcrumbs, Worcestershire sauce, and liquid smoke until just combined.
04 - Add chopped bacon and diced sharp cheddar cheese to the meat mixture, mixing until evenly distributed for bursts of flavor.
05 - Shape the mixture into a uniform loaf and place it in the prepared baking dish.
06 - Arrange the remaining slices of uncooked bacon lengthwise over the meatloaf, tucking the edges underneath if needed.
07 - Bake uncovered for 50 to 60 minutes until the internal temperature reaches 160°F (71°C).
08 - While baking, whisk together ketchup, maple syrup or brown sugar, and sriracha if using. Brush the glaze over the top of the meatloaf.
09 - Return to oven and bake for an additional 5 to 10 minutes to set the glaze and caramelize the top.
