Drain excess liquid from dill pickle relish to prevent a watery mixture.

In a large bowl, gently mix together the drained pickle relish, lean ground beef, crispy fried onions (or substitute), eggs, panko breadcrumbs, Worcestershire sauce, and liquid smoke until just combined.

Add chopped bacon and diced sharp cheddar cheese to the meat mixture, mixing until evenly distributed for bursts of flavor.

Shape the mixture into a uniform loaf and place it in the prepared baking dish.

Arrange the remaining slices of uncooked bacon lengthwise over the meatloaf, tucking the edges underneath if needed.

Bake uncovered for 50 to 60 minutes until the internal temperature reaches 160°F (71°C).

While baking, whisk together ketchup, maple syrup or brown sugar, and sriracha if using. Brush the glaze over the top of the meatloaf.

Return to oven and bake for an additional 5 to 10 minutes to set the glaze and caramelize the top.
