Avocado Mushroom Toast (Print Version)

Crisp sourdough topped with mashed avocado and thyme-infused sautéed mushrooms.

# Ingredients:

→ Mushrooms

01 - 8.8 ounces chestnut mushrooms, cleaned and sliced
02 - 1 clove garlic, crushed
03 - 1 tablespoon extra virgin olive oil
04 - 1 tablespoon tamari sauce
05 - 2 tablespoons fresh thyme leaves
06 - Freshly ground black pepper, to taste

→ Avocado

07 - 1 ripe avocado
08 - Juice of 1/2 lemon
09 - Pinch sea salt or pink Himalayan salt

→ To Serve

10 - 2 slices sourdough bread or preferred bread

# Steps:

01 - Heat the extra virgin olive oil in a large non-stick skillet over medium heat. Add crushed garlic and sauté for 1 minute, stirring to avoid burning. Add sliced mushrooms and tamari sauce; cook for 8 to 10 minutes, stirring regularly, until the mushrooms release their moisture and become tender. Fold in thyme leaves and season with freshly ground black pepper.
02 - In a bowl, mash the ripe avocado with a fork until creamy. Blend in lemon juice and a pinch of salt until smooth and fully mixed.
03 - Toast bread slices until crisp and golden. Evenly spread the mashed avocado over each slice. Top generously with sautéed mushrooms. Serve immediately.
