Avocado Garlicky Mushroom Toast (Print Version)

# Ingredients:

→ Mushrooms

01 - 8.8 ounces chestnut mushrooms, cleaned and sliced
02 - 1 clove garlic, crushed
03 - 1 tablespoon extra virgin olive oil
04 - 1 tablespoon tamari sauce
05 - 2 tablespoons fresh thyme leaves
06 - Freshly ground black pepper, to taste

→ Avocado Mash

07 - 1 ripe avocado
08 - Juice of 1/2 lemon
09 - Pinch of sea salt or pink Himalayan salt

→ To Serve

10 - 2 slices sourdough bread or bread of choice

# Instructions:

01 - Warm olive oil in a large non-stick skillet over medium heat. Add crushed garlic and sauté for 1 minute, stirring to avoid scorching.
02 - Incorporate sliced mushrooms and tamari sauce. Cook for 8 to 10 minutes, stirring occasionally, until mushrooms are tender and most liquid has evaporated. Stir in thyme leaves and season with freshly ground black pepper.
03 - In a bowl, mash the avocado with a fork until creamy. Add lemon juice and a pinch of salt, mixing until smooth and evenly combined.
04 - Toast the bread slices until crisp and golden on both sides.
05 - Spread the prepared avocado mixture evenly onto the toasted bread. Top generously with sautéed mushrooms and serve immediately.
