# Ingredients:

01 - 4 large yellow onions, peeled and sliced into 1/4-inch rounds
02 - Olive oil, for drizzling
03 - 1/2 teaspoon fresh thyme, finely chopped
04 - Salt, to taste
05 - Black pepper, freshly ground, to taste

→ Cream Sauce

06 - 1 cup heavy cream
07 - 2 teaspoons Dijon mustard
08 - 1/2 cup Asiago cheese, finely grated

# Steps:

01 - Preheat oven to 450°F. Lightly grease a baking dish large enough to hold onion slices in a single layer.
02 - Arrange the onion rounds in the baking dish in a single, even layer. Drizzle with olive oil and sprinkle with fresh thyme, salt, and black pepper.
03 - Roast onions uncovered for 20 minutes, until softened and starting to caramelize at the edges.
04 - While onions roast, heat heavy cream in a saucepan over medium heat until just simmering. Whisk in Dijon mustard and half the Asiago cheese until melted and smooth.
05 - Pour the cream mixture evenly over the roasted onions. Sprinkle with the remaining Asiago cheese. Cover the dish with foil and bake for an additional 20 minutes, until the onions are tender, cheese is melted, and the sauce is bubbling.
