Air Fryer Lumpia Rolls (Print Version)

Crispy, meaty lumpia with beef, pork, and veggies, air fried for a satisfying bite with sweet chili sauce.

# Ingredients:

→ Filling

01 - 4 ounces ground beef
02 - 8 ounces ground pork
03 - 6 garlic cloves, finely chopped
04 - 2 tablespoons finely chopped fresh ginger
05 - 0.5 cup diced water chestnuts
06 - 0.25 cup finely diced carrots
07 - 0.5 small Spanish onion, finely diced
08 - 3 tablespoons low-sodium soy sauce
09 - 0.75 teaspoon toasted sesame oil
10 - 1 teaspoon kosher salt
11 - 0.5 teaspoon freshly ground black pepper
12 - 0.5 teaspoon Thai chili flakes
13 - 1 medium scallion, thinly sliced

→ Assembly

14 - 15 spring roll wrappers, halved diagonally
15 - 1 large egg, whisked with 1 tablespoon water

→ Cooking and Serving

16 - Peanut or vegetable oil, as needed for frying
17 - 1.5 cups sweet chili sauce, for serving

# Steps:

01 - Place ground beef and ground pork in a large bowl and gently mix until homogenous.
02 - Add garlic, ginger, water chestnuts, carrots, onion, soy sauce, sesame oil, kosher salt, black pepper, Thai chili flakes, and scallion. Mix thoroughly until the filling is evenly blended.
03 - Arrange one wrapper half on a clean surface with a point toward you. Place 2 heaping tablespoons of filling near the bottom tip and spread gently. Fold the bottom up over the filling, tuck in the sides, and roll tightly. Brush the top tip with egg wash, then seal.
04 - Place rolled lumpia seam side down on a parchment-lined baking sheet. Lumpia may be refrigerated under a damp towel for up to 8 hours, or frozen in an airtight container for later use.
05 - Heat peanut or vegetable oil in a Dutch oven or deep skillet to 350°F.
06 - Fry lumpia in batches of 4 to 6, turning occasionally, until golden brown and crisp—about 4 minutes from fresh, or 6 minutes from frozen.
07 - Transfer fried lumpia to a paper towel-lined tray with a slotted spoon, allowing excess oil to drain. Serve immediately with sweet chili sauce alongside.
