Air Fryer Crispy Cauliflower (Print Version)

# Ingredients:

→ For the Blue Cheese Dip

01 - 1/4 cup plain Greek yogurt
02 - 1/4 cup mayonnaise
03 - 1/4 cup crumbled blue cheese
04 - A pinch of freshly ground black pepper
05 - A dash of your favorite hot sauce

→ For the Crispy Cauliflower

06 - 1 fresh head cauliflower
07 - 1 teaspoon kosher salt
08 - 1/2 teaspoon chili powder
09 - 1/2 teaspoon garlic powder
10 - 2 large eggs
11 - 1/4 cup water
12 - 1 cup plain breadcrumbs
13 - Nonstick cooking spray for the air fryer

# Instructions:

01 - Mix your Greek yogurt, mayo, crumbled blue cheese, a pinch of black pepper, and a dash of hot sauce in a bowl until well combined. Pop it in the fridge to let the flavors mingle while you make the cauliflower.
02 - Break down your cauliflower head into bite-sized florets, aiming for pieces no bigger than 1 1/2 inches. This helps them cook evenly and makes them perfect for dipping.
03 - Toss your florets with salt, chili powder, and garlic powder in a bowl. In a separate bowl, beat your eggs with water. Pour this egg mix over your seasoned cauliflower and toss until every piece is coated. Finally, add your breadcrumbs and toss until they're nicely coated.
04 - Give your air fryer basket a good spray with nonstick cooking spray. Lay out your breaded cauliflower in a single layer - don't crowd them! Cook at 350°F for 7 minutes, flip them over, then cook another 7 minutes until they're golden and crispy. You'll probably need to cook in batches.
05 - These are best fresh out of the air fryer while they're super crispy! Serve them right away with your chilled blue cheese dip on the side.

01 - You can also make these in a regular oven - spread them on a baking sheet and cook at 350°F for 20-30 minutes, flipping halfway through
02 - Work in batches to avoid overcrowding, which keeps them extra crispy
03 - These are best enjoyed right away while they're hot and crispy
