Break down your cauliflower head into bite-sized florets, aiming for pieces no bigger than 1 1/2 inches. This helps them cook evenly and makes them perfect for dipping.

Toss your florets with salt, chili powder, and garlic powder in a bowl. In a separate bowl, beat your eggs with water. Pour this egg mix over your seasoned cauliflower and toss until every piece is coated. Finally, add your breadcrumbs and toss until they're nicely coated.

Give your air fryer basket a good spray with nonstick cooking spray. Lay out your breaded cauliflower in a single layer - don't crowd them! Cook at 350°F for 7 minutes, flip them over, then cook another 7 minutes until they're golden and crispy. You'll probably need to cook in batches.
