Roasted Cauliflower Chimichurri Rice (Print Version)

Smoky cauliflower, crisp chickpeas, and herb chimichurri tossed with warm rice for vibrant flavor in each bite.

# Ingredients:

→ For the Cauliflower

01 - 1 head cauliflower, cut into florets
02 - 1 can (15 ounces) chickpeas, drained and rinsed
03 - 2 tablespoons olive oil
04 - 1 tablespoon smoked paprika
05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - 1 teaspoon dried oregano
08 - 1/2 teaspoon ground black pepper
09 - 1/4 teaspoon salt

→ For the Chimichurri

10 - 1 bunch cilantro, stems removed
11 - 1/2 bunch flat-leaf parsley, stems removed
12 - 2 cloves garlic, peeled
13 - 1/4 medium red onion, roughly chopped
14 - 1 jalapeño, roughly chopped
15 - 1/4 cup red wine vinegar
16 - 1/3 cup olive oil
17 - Black pepper to taste

→ For the Rice

18 - 1 cup dry white rice, such as basmati
19 - 2 cups vegetable broth or water

# Instructions:

01 - Preheat oven to 425°F and line a baking sheet with parchment paper. Add cauliflower florets, chickpeas, olive oil, smoked paprika, garlic powder, onion powder, oregano, black pepper, and salt to the baking sheet. Toss until evenly coated, then spread in an even layer. Roast for 20 minutes, toss, and continue roasting for another 10 minutes until golden and crisp.
02 - In a food processor, combine cilantro, parsley, garlic, red onion, jalapeño, red wine vinegar, olive oil, and black pepper. Blend until smooth. Adjust seasoning if needed and set aside.
03 - Combine white rice and broth or water in a medium skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15 to 20 minutes until the liquid is absorbed and rice is tender.
04 - Remove the skillet from heat. Add 2 to 4 tablespoons of chimichurri to the cooked rice. Fluff with a fork and taste, adjusting seasoning as desired.
05 - Divide chimichurri rice among bowls. Top with roasted cauliflower and chickpeas. Serve with extra chimichurri sauce on the side and garnish with any leftover fresh herbs.
