Lime Drenched Sweet Potato (Print Version)

Savory black bean and sweet potato patties glazed with a bright lime drizzle for zesty plant-based flavor.

# Ingredients:

→ Black Bean Patties

01 - 2 cans (15 oz each) black beans, drained and rinsed
02 - 1 medium sweet potato (about 12 oz), cut into 1/2-inch cubes
03 - 3/4 cup old-fashioned rolled oats
04 - 1/2 medium yellow onion, diced
05 - 1/2 medium red bell pepper, diced
06 - 4 cloves garlic, minced
07 - 2 teaspoons smoked paprika
08 - 1/2 teaspoon ground coriander
09 - 1/2 teaspoon fennel seeds
10 - 1/4 teaspoon ground cumin
11 - 1/2 vegan beef bouillon cube or 1/2 teaspoon Better Than Bouillon Vegetable Base
12 - 1 tablespoon tamari
13 - Kosher salt, as needed
14 - Oil spray, for baking

→ Lime Drench

15 - 2 tablespoons avocado oil
16 - Juice of 1 small lime
17 - 1 to 2 tablespoons agave syrup

# Instructions:

01 - Preheat oven to 425°F (218°C) and line two baking trays with parchment paper.
02 - Fully drain and rinse black beans, removing excess liquid. Spread beans evenly on one prepared tray in a single layer.
03 - Arrange cubed sweet potato on one side of the second tray. Place diced onion, diced red bell pepper, and minced garlic on the other side. Drizzle with oil spray and sprinkle lightly with salt. Toss to coat and spread vegetables evenly.
04 - Place bean tray on the top oven rack and vegetable tray on the bottom rack. Bake black beans for 15 minutes. Roast vegetables for 15 to 20 minutes, or until sweet potatoes are tender. Remove from oven and allow everything to cool for 10 minutes.
05 - Transfer baked beans and vegetables to a food processor. Add rolled oats, smoked paprika, ground coriander, fennel seeds, ground cumin, crushed bouillon cube or vegetable base, and tamari. Pulse until mixture binds and is well incorporated, scraping sides as necessary.
06 - Portion mixture using a 1/3 cup measure and form into patties about 1/2 inch thick. Place patties on a lined tray and spray both sides lightly with oil.
07 - Bake patties on center rack for 15 minutes.
08 - While patties bake, whisk together avocado oil, lime juice, agave syrup, and a pinch of salt in a bowl.
09 - Remove patties from oven. Brush tops with lime drench, flip, brush other side, and return to oven for 5 to 10 minutes, until golden brown.
10 - Let patties rest for 10 minutes to firm up. Brush with additional lime drench before serving if desired.
