Garlic Butter Salmon Spinach Mushrooms (Print Version)

Salmon fillets, sautéed mushrooms, and spinach meet in a velvety, garlic-infused cream sauce.

# Ingredients:

→ For the Salmon

01 - 4 salmon fillets, approximately 6 ounces each, skin on or off
02 - Salt, to taste
03 - Black pepper, to taste
04 - 1 tablespoon olive oil
05 - 2 tablespoons unsalted butter

→ For the Sauce

06 - 2 tablespoons unsalted butter
07 - 3 to 4 garlic cloves, minced
08 - 8 ounces cremini or button mushrooms, sliced
09 - 4 cups baby spinach leaves
10 - 3/4 cup heavy cream
11 - 1/4 cup grated Parmesan cheese (optional)
12 - Salt, to taste
13 - Black pepper, to taste
14 - Pinch of red pepper flakes (optional)
15 - Juice of 1/2 lemon (optional)

# Instructions:

01 - Pat salmon fillets dry with paper towels and season both sides with salt and black pepper.
02 - Heat olive oil and 2 tablespoons butter in a large skillet over medium heat. Place salmon fillets skin-side down and cook for 4 to 5 minutes. Carefully flip and sear the other side for 2 to 4 minutes until golden and cooked through. Remove salmon from skillet and tent with foil to keep warm.
03 - In the same skillet, melt 2 tablespoons butter. Add minced garlic and sauté for about 30 seconds until fragrant. Add sliced mushrooms, stirring occasionally, and cook for 5 to 7 minutes until they release moisture and become golden brown.
04 - Add baby spinach to the mushrooms and cook for 1 to 2 minutes until the spinach is wilted.
05 - Reduce heat to low and pour in heavy cream. Stir in Parmesan cheese if using, then season with additional salt, black pepper, and red pepper flakes if desired. Simmer the mixture for 2 to 3 minutes until it slightly thickens. Stir in a splash of lemon juice for brightness, if desired.
06 - Return the seared salmon fillets to the skillet, nestling them in the creamy sauce. Gently spoon sauce over each fillet and simmer for 1 to 2 minutes until heated through.

01 - For optimal texture, avoid overcooking the salmon and remove it from heat as soon as it flakes easily with a fork.
