Garlic Butter Chicken Sandwich (Print Version)

Juicy chicken, crisp lettuce, and tomatoes come together on garlic butter toast for a satisfying sandwich.

01 - 8 slices thick-cut bread such as Texas toast
02 - 1/2 cup unsalted butter, softened
03 - 2 to 3 cloves garlic, finely minced
04 - 1 teaspoon dried Italian herbs or mixed dried parsley, oregano, and basil
05 - 1/2 teaspoon red pepper flakes, optional
06 - 2 boneless, skinless chicken breasts
07 - Olive oil, for brushing
08 - Salt, to taste
09 - Black pepper, to taste
10 - 1 to 2 large ripe tomatoes, sliced
11 - Green leaf lettuce or Romaine leaves, washed and dried
12 - Mayonnaise, for spreading

# Instructions:

01 - Preheat a grill pan or outdoor grill to medium-high heat. Brush the chicken breasts with olive oil and season both sides with salt and black pepper. Grill the chicken for 5 to 6 minutes per side, or until the internal temperature reaches 165°F. Allow the chicken to rest for several minutes, then slice thinly across the grain.
02 - In a small bowl, combine the softened butter, minced garlic, dried Italian herbs, and red pepper flakes if using. Stir the mixture until thoroughly blended.
03 - Evenly spread the garlic butter mixture onto one side of each bread slice. Place the slices, buttered side down, on a skillet or griddle over medium heat. Toast for 2 to 3 minutes or until golden brown and crisp.
04 - Wash and dry the lettuce leaves. Slice the tomatoes, seasoning lightly with salt and black pepper.
05 - Spread a thin layer of mayonnaise on the unbuttered side of each toasted bread slice. Layer the lettuce, tomato slices, sliced grilled chicken, and any desired cheese or avocado onto half of the bread slices. Top each with a second slice of bread, garlic butter side facing out.
06 - Slice sandwiches in half and serve immediately while the bread remains crisp and the filling is warm.
