Dragon Noodles Garlic Chili (Print Version)

Chewy noodles in fiery chili garlic sauce with eggs, green onions, and sesame seeds for extra crunch.

# Ingredients:

→ Noodles and Aromatics

01 - 8 ounces dry ramen noodles or rice noodles
02 - 2 tablespoons vegetable oil
03 - 3 cloves garlic, finely minced

→ Sauce

04 - 3 teaspoons chili paste, such as sambal oelek or sriracha
05 - 2 tablespoons low sodium soy sauce
06 - 1 tablespoon oyster sauce
07 - 2 tablespoons brown sugar, lightly packed
08 - 1 tablespoon sesame oil

→ Eggs

09 - 2 large eggs, beaten

→ Garnish

10 - 2 green onions, thinly sliced
11 - 1 teaspoon sesame seeds

# Instructions:

01 - Boil noodles in a large pot of water according to package directions. Drain thoroughly and set aside.
02 - In a small bowl, whisk together chili paste, soy sauce, oyster sauce, brown sugar, and sesame oil until fully combined. Set aside.
03 - Heat vegetable oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
04 - Push sautéed garlic to the side of the pan. Pour beaten eggs into the empty space and scramble until cooked through. Mix eggs with garlic.
05 - Add cooked noodles to the pan with garlic and eggs. Pour prepared sauce over top and toss everything together until noodles are fully coated and heated through.
06 - Transfer noodles to serving bowls and top with sliced green onions and sesame seeds.

# Notes:

01 - For extra heat, increase the amount of chili paste to preference.
