01 - 3 large russet potatoes, peeled and cubed
02 - 2 tablespoons olive oil
03 - 1 teaspoon salt
04 - 0.5 teaspoon ground black pepper
05 - 1 teaspoon garlic powder
06 - 1 teaspoon paprika

→ Beef Filling

07 - 1 pound ground beef
08 - 0.5 teaspoon salt
09 - 0.5 teaspoon ground black pepper
10 - 2 teaspoons chili powder
11 - 1 teaspoon ground cumin
12 - 1 teaspoon dried cilantro
13 - 1 teaspoon paprika
14 - 0.5 cup water
15 - 1 tablespoon minced garlic

→ Burrito Assembly

16 - 1 cup nacho cheese sauce
17 - 5 large (burrito-size) flour tortillas
18 - 0.5 cup taco sauce

# Instructions:

01 - Peel, wash, and cut the potatoes into 1 centimeter cubes. Toss the potatoes with olive oil, salt, black pepper, paprika, and garlic powder in a large mixing bowl.
02 - Transfer the seasoned potatoes to the air fryer basket. Cook at 400°F (204°C) for 25 minutes, shaking the basket at least twice during the cooking process until golden and crisp.
03 - Heat a large skillet over medium-high heat. Add ground beef and cook, breaking up with a spatula. Season with salt, black pepper, chili powder, cumin, dried cilantro, and paprika. Stir in minced garlic. Once browned and cooked through, drain any excess fat, add water, and simmer for 2-3 minutes.
04 - Reduce heat to low under the skillet and keep beef mixture warm while potatoes finish roasting.
05 - Lay out each flour tortilla on a clean surface. Spread a portion of nacho cheese down the center, top with a scoop of cooked beef, a drizzle of taco sauce, a layer of roasted potatoes, and an extra spoonful of nacho cheese. Fold the sides and roll tightly to enclose the filling.
06 - Place assembled burritos seam side down in a clean skillet over medium-high heat. Cook for 2-3 minutes per side or until each burrito is golden brown and warmed through on all sides.
